Pancakes are a brilliant breakfast feast. I love regular pancakes, but these pancakes are just delicious. My parents love to eat them with blueberries and maple syrup. I eat them with Nutella.
These have no added sugar, so don’t feel bad for eating them. The bananas give these pancakes a beautiful taste.
ingredients
350g self-raising flour
1 tsp baking powder
2 1/2 very ripe bananas
2 medium eggs
2 tsp vanilla extract
280ml milk
a little butter for frying
you will need :
· A mixing bowl
· A frying pan
Sift the flour, baking powder and a generous pinch of salt into a large bowl.
In a separate mixing bowl, mash the ripe bananas until smooth, then whisk in the eggs, vanilla extract and milk. Make a well in the centre of the dry ingredients, then add the wet ingredients and whisk together to create a smooth, silky batter.
Heat a little butter in a large non-stick pan over a medium heat. I personally love a flat frying pan, it makes pancake making so much better.
The first pancake is the tester, It won't turn out perfect. This ones just checks the cutting time and heat of the pan so start with one at the time.
Add 3 tbsp of the batter to the pan and cook for several minutes, or until small bubbles start appearing on the surface.
Flip the pancake over and cook for 2 mins on the other side. Repeat with the remaining batter.
To keep pancakes warm wrap in aluminium.
Stack the pancakes on plates and top with the banana slices, some sticky maple syrup and a handful of blueberries, if you like.
top tip: If you freeze your pancakes for next time, you can heat them up in the toaster.
